soggy bottom

Damp pastry base

A soggy bottom is pastry that hasn't crisped properly during baking, remaining wet and underdone where it meets the filling.

The term gained currency through British baking shows, where it became shorthand for a common failure: The judges noted a soggy bottom on her quiche.

The phrase also refers to low-lying, waterlogged land.
