palatableness

Quality of agreeableness

The quality of being acceptable or agreeable, especially to the taste.

Food has palatableness when it's pleasant to eat, but the word applies more often to abstract things: The palatableness of the proposal made negotiations easier.

The simpler form palatability is more common in contemporary usage.
