microplanes
Razor-sharp kitchen tools
Microplanes are kitchen tools with razor-sharp grating surfaces, used for finely zesting citrus, grating hard cheeses, or shaving chocolate and spices.
The name comes from the woodworking rasps they were adapted from.
The singular microplane can also refer to the brand that popularized them: I use my Microplane for garlic and Parmesan.
