lotus paste
Sweet bean paste
Lotus paste is a sweet filling made from dried lotus seeds, used in East Asian confections.
It has a smooth, dense texture similar to bean paste and appears most famously in mooncakes, the traditional Chinese pastries eaten during the Mid-Autumn Festival: mooncakes with lotus paste and salted egg yolk.
The paste ranges from pale gold to deep brown depending on how long it's cooked.
