green olive
Pimento's usual home
A green olive is an olive harvested before it ripens, while still unripe and firm.
Unlike black olives, which are picked when mature, green olives have a sharper, more bitter taste and firmer texture.
They're typically cured or brined before eating: a martini garnished with green olives, a bowl of green olives stuffed with pimentos.
