In gaming, it refers to exploiting a cheap or unintended strategy to win easily rather than through skill: He's just cheesing with that overpowered combo.
More broadly, cheesing means grinning widely, like someone posing for a photo and saying "cheese": She was cheesing so hard when she got the promotion.
