cheese cave
Underground ripening room
A cheese cave is a temperature- and humidity-controlled environment where cheese is aged, traditionally an actual underground cave but now often a purpose-built room or cellar.
The cool, moist conditions allow cheese to develop flavor and texture over weeks or years: The cheddar spent eighteen months in the cheese cave.
Some operations store surplus cheese in converted limestone mines or Cold War bunkers.
