beet root
Crimson root vegetable
Beetroot is the edible root of the beet plant, deep red-purple and typically eaten cooked or pickled.
The spelling as one word or two (beet root) is more common in British English; Americans usually say simply beet.
The distinctive color stains everything it touches and turns urine pink—a harmless effect that alarms the uninformed.
