Nearly burnt coffee
Italian roast is among the darkest levels of coffee roasting, producing beans that are nearly black with a shiny, oily surface.
The extended roasting time burns off most origin characteristics, yielding a smoky, bitter, almost charred flavor: I prefer Italian roast for espresso.
Darker than French roast, it sits at the extreme end of the roasting spectrum.
