Unripe papaya is the fruit of the papaya tree harvested before it matures and sweetens.
The flesh is firm, pale, and mildly bitter rather than soft and orange.
It's commonly shredded raw for salads in Southeast Asian cuisines, particularly Thai som tam, or cooked as a vegetable in curries and stews: Green papaya salad with lime and fish sauce.
