Stuffing up is Australian and British slang for making a mistake or bungling something: I keep stuffing up the recipe.
It's the progressive form of stuff up, a milder alternative to fucking up.
Someone who stuffs up is a stuff-up, and the mistake itself is also a stuff-up.
