overextraction

Taking out too much

Overextraction occurs when too much of something is drawn out, typically making the result worse rather than better.

In coffee brewing, overextraction happens when water pulls too many compounds from the grounds, producing bitter, harsh flavors: The coffee tastes burnt—classic overextraction.

The term applies similarly in tea, espresso, and other extraction processes.

More broadly, it describes depleting a resource beyond sustainable levels: overextraction of groundwater.
