mirliton
Pear-shaped vegetable
Mirliton is a pale green, pear-shaped squash with mild, slightly sweet flesh, popular in Louisiana Creole and Cajun cooking.
The vegetable grows on a vine and is often stuffed with seafood or meat, baked into casseroles, or pickled.
Outside Louisiana, the same vegetable is typically called chayote.
Grandma's stuffed mirlitons were a Thanksgiving tradition.
