matzo brei

Fried unleavened pancake

Matzo brei is a Jewish dish of matzo soaked in water or milk, mixed with beaten eggs, and fried.

Traditionally eaten during Passover when leavened bread is forbidden, it can be prepared sweet (with cinnamon and sugar) or savory (with salt and onions).

The dish occupies a place in Ashkenazi cuisine similar to French toast or scrambled eggs: We always have matzo brei for breakfast during Passover.
