gum paste
Edible modeling clay
Gum paste is a pliable sugar dough used in cake decorating, made from powdered sugar, water, and a gum agent like gum tragacanth or tylose.
It dries hard and smooth, making it ideal for delicate decorations—flowers, ribbons, figurines—that hold their shape: She sculpted roses from gum paste for the wedding cake.
Unlike fondant, gum paste isn't meant to be eaten, though it's technically edible.
