barnyard smell

A barnyard smell is the distinctive odor of a working farm—manure, hay, animal sweat, and damp earth mingled together.

The phrase often describes something pungent and rustic, whether literal or figurative: The cheese had a barnyard smell that put off some guests.

In wine tasting, barnyard is a recognized descriptor for certain earthy, funky notes, sometimes considered a flaw and sometimes prized.
