USDA grade

Beef quality mark

USDA grade is a quality rating assigned to food products—especially meat, poultry, and eggs—by the United States Department of Agriculture.

For beef, grades like Prime, Choice, and Select indicate marbling and expected tenderness.

Egg grades (AA, A, B) reflect shell condition and interior quality.

The grading is voluntary; producers pay for inspection to display the USDA shield.
