Devon cream
Thick British spread
Devon cream is a thick, rich clotted cream traditionally produced in Devon, England.
Made by slowly heating unpasteurized cow's milk until a thick layer of cream rises and clots on the surface, it has a distinctively high butterfat content and slightly golden crust.
Devon cream is the essential accompaniment to scones in a cream tea: She spread Devon cream and strawberry jam on her scone.
Also called Devonshire cream; nearly identical to Cornish clotted cream, though the two counties dispute which originated the tradition.
