underbake

Pull out too soon

To underbake is to bake something for less time than needed, leaving the inside raw or doughy: The brownies were underbaked and gooey in the center.

Sometimes deliberate for texture preferences, but usually a mistake.

The adjective underbaked describes the result: underbaked cookies, an underbaked crust.
