quick freezing
Flash-cold food preservation
Quick freezing is a method of preserving food by rapidly lowering its temperature, typically to well below zero.
The speed prevents large ice crystals from forming, which would damage cell structure and degrade texture.
Commercial quick freezing uses blasts of cold air, direct contact with refrigerated surfaces, or immersion in cold liquid.
The process preserves flavor and nutrition better than slow freezing: Quick-frozen vegetables retain more vitamins than those frozen at home.
