Not fully pickled
Half sour describes pickles that have been brined for a shorter time than full sours, resulting in a milder tang and crisper texture.
The cucumber flavor remains more prominent: I prefer half sours—they still have some crunch.
The term occasionally extends to anything incompletely transformed or halfway committed.
