dehydrated vegetables
Moisture-free garden foods
Dehydrated vegetables are vegetables that have had most of their water content removed through drying, extending shelf life and reducing weight.
They're common in camping food, instant soups, and emergency supplies.
Unlike fresh vegetables, they store for months or years without refrigeration: The backpackers packed dehydrated vegetables for the trail.
Rehydrating them restores some but not all of their original texture.
