countermen
Behind-the-counter workers
Countermen is the plural of counterman, a person who serves customers from behind a counter, typically in a deli, diner, or luncheonette.
The term evokes mid-twentieth-century American eating establishments where orders were taken and food was served across a long counter rather than at tables.
The countermen at the old deli knew all the regulars by name.
The role has largely been replaced by more generic service positions, making the word somewhat dated.
