Spanish omelet

Eggs with potatoes

A Spanish omelet is an omelet made with potatoes and onions, cooked in olive oil until the potatoes are tender, then bound with eggs.

Called tortilla española in Spanish, it's served at room temperature, often cut into wedges as tapas.

The American sense sometimes refers to any omelet with peppers, onions, and tomatoes: I ordered a Spanish omelet with salsa on the side.
