Dutch chocolate
Alkalized cocoa powder
Dutch chocolate is chocolate made from cocoa beans processed with an alkalizing agent, a method developed in the Netherlands in the nineteenth century.
The process darkens the color, mellows the flavor, and reduces acidity.
Dutch-process cocoa is preferred in many baking recipes: The cake calls for Dutch chocolate, not regular cocoa.
