Crystallized honey is honey that has naturally solidified into a grainy or semi-solid state as its glucose forms crystals.
This is a normal process that doesn't indicate spoilage—the honey remains safe to eat indefinitely.
Gentle warming returns it to liquid form: I put the jar of crystallized honey in warm water to soften it.
